on November 16 , starting at 10am, at Vancouver Community College, ICE-Italian Trade Commission organizes a Masterclass for professionals, restaurateurs, distributors and importers on culinary tradition of Emilia-Romagna. Indulge in a captivating culinary experience for “Artigianato a Tavola,” a celebration of Emilia-Romagna Cuisine brought to life in the heart of Vancouver. This special event showcases a fascinating masterclass led by Chef Mark Massicotte and David Azzi, presented by the ITA Toronto office in collaboration with Confartigianato.

Emilia-Romagna, nestled in the western part of the region extending from Bologna to the Adriatic coast, exudes a unique charm. Here, the Byzantine heritage has profoundly shaped the region’s culture, evident in the splendid churches and mesmerizing mosaics of Ravenna. The use of terracotta-based cooking methods further echoes this cultural influence. Unlike Emilia, Romagna’s gastronomic tradition is less influenced by aristocratic customs and more by the region’s proximity to the sea. This has fostered a culinary legacy that is beautifully simple yet incredibly diverse and deeply connected to the land. Today, the exceptional skills of Canadian Master Chefs find their roots in this heritage, where local farms and businesses continue to embrace a craftsmanship-driven approach. Confartigianato actively fosters these connections, as showcased in the recent visit in September 2023, where Canadian importers and distributors of Italian fine foods met with local producers. Discover the essence of Romagna’s culinary tapestry at, and relish the legacy of gastronomy inspired by simplicity and a profound connection to the land.
